Risotto Ingredients

  • 150g Chamdream rice (from Gyeonggi Province)
  • 3 Tbsp green onion, finely chopped
  • 1/4 onion, thinly sliced
  • 100g ground meat (pork or beef)
  • 2 button mushrooms, sliced
  • 2 cloves garlic, thinly sliced
  • 12g Korean green chili pepper, minced
  • 2 dried Vietnamese chili peppers (optional, for extra heat)

Perilla Sauce

  • 250ml water
  • 0.5 Tbsp chicken or beef stock
  • 2 Tbsp perilla seed powder
  • 150ml heavy cream
  • 50ml milk
  • 1 tsp salt (or to taste)
  • Pinch of black pepper

Garnish

  • A small amount of perilla leaves, thinly sliced
  • A small amount of carrot, thinly julienned

Cooking Instructions

First, rinse the Chamdream rice thoroughly and cook it as you normally would. This special rice will provide a wonderfully chewy and soft texture to your risotto.

In a separate pot, bring 250ml of water to a boil. Once boiling, dissolve 0.5 Tbsp of chicken stock or beef stock into the water. This stock will add a foundational depth of flavor to your risotto.

As soon as the stock water comes back to a boil, turn off the heat. Avoid boiling it for too long, as the stock can become too concentrated or salty.
