Ingredients- 1 cup ground pork
- 1.5 cups tomato spaghetti sauce
- 1/2 onion
- 1 potato
- 7 cherry tomatoes
- 1 king oyster mushroom
- 1 handful spinach
- 300ml water
- 4 pinches salt
- 4 pinches black pepper
- 1 Tbsp minced garlic (added during sautéing)
Cooking Instructions
Step 1
First, prepare the vegetables for the stew. You’ll need 1 potato, 1 king oyster mushroom, 1/2 onion, 6 cherry tomatoes (you can use the remaining 1 for garnish or omit it), and 1 handful of spinach. Dice the potato, onion, and king oyster mushroom into bite-sized pieces. Halve the cherry tomatoes. Don’t hesitate to use any other vegetables you have in your fridge; they all add wonderful flavor to stew!
Step 2
Heat a lightly oiled pan over medium heat. Add the 1 cup of ground pork. Stir in 1 Tbsp of minced garlic, 2 pinches of salt, and 2 pinches of black pepper. Break up the meat with a spatula and sauté until it’s evenly browned and cooked through. This step helps develop a rich flavor base.
Step 3
Once the ground pork is mostly cooked, add the diced potato, onion, king oyster mushroom, and halved cherry tomatoes to the pan. Stir everything together and sauté for a few minutes until the vegetables begin to soften slightly. The vegetables will release their natural sweetness, complementing the savory pork. Set the spinach aside for now, as it will be added at the very end.
Step 4
When the pork and vegetables are nicely sautéed, pour in 1.5 cups of tomato spaghetti sauce and 300ml of water. Stir well, scraping up any browned bits from the bottom of the pan – these add a wonderful depth of flavor to the stew.

Reduce the heat to low, cover the pot with a lid, and let the stew simmer gently until all the ingredients are tender. This should take about 10 minutes. Simmering allows the flavors to meld together beautifully. Stir occasionally to prevent sticking.

After about 10 minutes, add the 1 handful of spinach to the stew and stir it in. Cover again and cook for just 1-2 more minutes, or until the spinach has wilted. Finally, taste the stew and adjust the seasoning with the remaining 2 pinches of salt and 2 pinches of black pepper, or as needed, to achieve your desired flavor. I found this amount to be perfect.
