  • Tofu 1 block (firm tofu recommended)

Pork Marinade

  • Cooking wine 2 Tbsp
  • Black pepper, a pinch

Seasoning Mix

  • Gochugaru (Korean chili flakes) 1/2 Tbsp
  • Gochujang (Korean chili paste) 1/2 Tbsp
  • Doenjang (Korean soybean paste) 1/2 Tbsp
  • Ginger powder 1/4 Tbsp (or 1/2 tsp minced ginger)
  • Minced garlic 1 Tbsp
  • Soy sauce 2 Tbsp
  • Fish sauce 1 Tbsp (or anchovy sauce, substitute with salted seafood broth)
  • Black pepper, a pinch

Cooking Instructions

First, let’s prepare all the ingredients for our dish. For the pork, shoulder cut is recommended for its tenderness and rich flavor, but neck cut is also excellent if you prefer a chewier texture. For the fish sauce, you can use store-bought versions, or substitute with anchovy sauce or even regular soy sauce if that’s what you have. If your potatoes are medium-sized, you’ll need about two; if they’re large, one should suffice.

Cut the prepared pork into bite-sized pieces. Avoid cutting them too small, as they might break apart during cooking. Aim for a size that’s easy to eat.

In a bowl, place the cut pork. Add 2 tablespoons of cooking wine and a pinch of black pepper. Mix well to marinate. This step helps to tenderize the meat and remove any gamey odors, enhancing the overall flavor.

Peel the potatoes and cut them into bite-sized pieces, similar in size to the pork. Slice the onion into roughly 1cm thick strips. Cut the green onion and green chili pepper diagonally. Cut the tofu into bite-sized cubes as well.

Now, let’s make the delicious sauce that will define our jjigae! In a small bowl, combine 1/2 tablespoon of gochugaru, 1/2 tablespoon of gochujang, and 1/2 tablespoon of doenjang. Add 1/4 tablespoon of ginger powder for a fragrant kick, and 1 tablespoon of minced garlic. Mix in 2 tablespoons of soy sauce and 1 tablespoon of fish sauce (or salted seafood broth) for that savory depth, plus a pinch of black pepper. Stir everything together until well combined to create our flavorful seasoning mix.

Heat 2 tablespoons of cooking oil in a deep pot or pan over medium heat. Add the marinated pork and stir-fry until the surface is browned. Searing the pork first adds a wonderful depth of flavor to the stew.

Once the pork is browned, reduce the heat to medium-low. Add all of the prepared seasoning mix to the pot. Stir continuously for about 2 minutes, allowing the sauce to coat the pork and cook down slightly. This helps to meld the flavors.

Add the cubed potatoes and sliced onions to the pot. Pour in 1.5 cups of seafood broth or rice water (regular water will also work). Turn the heat up to high and bring the mixture to a boil. Cook for about 3 minutes, uncovered. Boiling vigorously at this stage helps the flavors to infuse quickly.

Once the stew is boiling, add the cubed tofu. Reduce the heat to medium, cover the pot, and continue to simmer until the potatoes are tender and cooked through. Stir occasionally to prevent sticking to the bottom.
