Hearty Potato Cheese Toast
Savory ‘Potato Cheese Toast’ Recipe
Whip up a satisfying and delicious cheese toast using ingredients you have at home! Featuring mashed potatoes and abundant toppings, it’s perfect for a snack or a simple meal. Kids will love it too!
Main Ingredients- 4 medium potatoes
- 4 spinach leaves
- About 1 cup shredded cabbage (weighed after prep)
- About 50g Spam
- A few black olives
- 6 slices of bread

Cooking Instructions
Step 1
First, prepare the potatoes which will be the filling for the toast. Peel the potatoes and wash them thoroughly.
Step 2
Slice the potatoes into flat pieces, about 0.5cm thick. Slicing them this way helps them cook faster and makes mashing easier.
Step 3
Place the sliced potatoes in boiling water and boil for about 3 minutes. They don’t need to be fully cooked; they should be slightly tender when pierced with a fork.
Step 4
Carefully remove the boiled potatoes from the water.
Step 5
It’s best to mash the potatoes while they are still warm. Use a fork or a potato masher to mash them until smooth and lump-free. For an extra smooth texture, you can pass them through a sieve or add a splash of milk.
Step 6
Wash the spinach leaves under running water, pat them dry, and finely chop them. Shred the cabbage similarly. Dice the Spam into small, bite-sized pieces.
Step 7
Heat a lightly oiled pan over medium heat. Add the chopped cabbage, spinach, and diced Spam. Sauté until the vegetables are tender and the Spam is lightly browned, releasing its savory juices.
Step 8
In a large bowl, combine the mashed potatoes, sautéed vegetables and Spam, and sliced black olives. Mix well. This amount of filling is enough for 3 slices of toast. You can make the remaining 3 toasts the same way or adjust to your preference.
Step 9
Spread a thin layer of pasta sauce on one side of each slice of bread. You can use ketchup or other sauces if you prefer. Sprinkle a generous amount of mozzarella cheese over the sauce.
Step 10
Next, evenly spread the mashed potato mixture over the cheese. Be careful not to overfill, as it might spill out when cooking.
Step 11
Cover the potato mixture with another layer of mozzarella cheese. Then, place another slice of bread on top to form a sandwich. Press the edges gently to seal the filling inside.
Step 12
Heat a good amount of cooking oil in a pan over low heat. Place the assembled toasts in the pan and grill slowly until both sides are golden brown and crispy. You can cover the pan to help the cheese melt thoroughly.
Step 13
Cut the well-cooked cheese toasts into desired portions and serve. Drizzle with Tonkatsu sauce if desired. Enjoy while warm for the best flavor and texture!
