Hearty Rice Balls with Leftover Shabu-Shabu Beef

This recipe is perfect for using up any leftover thinly sliced beef or pork from your shabu-shabu hot pot or Mille-feuille nabe. Give your leftovers a delicious second life as flavorful rice balls!
Main Ingredients- Leftover Shabu-Shabu meat (beef or pork, as much as you like, approx. 100-150g)
- Cooked rice (1 serving, approx. 200g)
- Salt (to taste)
- Sesame oil (1 tsp)
- Bok choy (1 head, optional)
Seasoning & Sauce- Oyster sauce (1 tsp, for stir-frying meat)
- Soy sauce (to taste, for stir-frying or dipping sauce)
- Wasabi paste (about a finger-joint length, for dipping sauce)
- Sesame seeds or toasted sesame seeds (a pinch, for garnish)

Cooking Instructions
Step 1
First, slice the leftover shabu-shabu meat into bite-sized pieces. Heat a lightly oiled pan over medium heat and stir-fry the meat until cooked. You can add about 1 teaspoon of oyster sauce while stir-frying for enhanced flavor. Once cooked, set the meat aside in a separate bowl.
Step 2
Season the warm cooked rice with salt to your preference. Add 1 teaspoon of sesame oil and mix gently. Combine thoroughly, much like you would season rice for kimbap, ensuring the seasoning is evenly distributed throughout the rice grains.
Step 3
If you have bok choy, wash it, chop it into manageable pieces, and lightly stir-fry it separately. Add the stir-fried bok choy on top of the rice for a refreshing crunch and a hint of freshness. (This step is optional if bok choy is unavailable.)
Step 4
Place the nicely stir-fried meat generously over the seasoned rice. Prepare to mix everything together so that the meat juices and flavors meld with the rice.

If you didn’t season the meat separately while stir-frying, now is a good time to make a simple dipping sauce. In a small bowl, mix a little soy sauce with about a finger-joint length of wasabi paste. This creates a delicious wasabi soy dipping sauce that cuts through any richness of the meat. You can also add a pinch of sesame seeds for garnish.
Step 6
Now, mix all the ingredients together and shape them into round, bite-sized rice balls. You can either mix the rice and meat thoroughly before shaping, or place the meat mixture on top of the rice balls as a topping.
