Hearty Roasted Gochujang with Nuts

Main Ingredients

  • 150g minced beef
  • 150g minced pork
  • 1 handful roasted peanuts
  • 500g gochujang (Korean chili paste)

Seasoning

  • 5 Tbsp soy sauce
  • 3 Tbsp oligosaccharide (or corn syrup)
  • 2 Tbsp minced garlic
  • A pinch of black pepper
  • A pinch of ginger powder
  • 2 Tbsp sesame oil
  • 2 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, prepare the minced beef and minced pork in a 1:1 ratio. Place the minced meats in a bowl. Add 5 Tbsp soy sauce, 3 Tbsp oligosaccharide, 2 Tbsp minced garlic, a pinch of ginger powder, and a pinch of black pepper. Mix well to ensure the seasonings are evenly distributed and to marinate the meat.

Let the marinated meat rest for at least 30 minutes. Heat a pan over medium heat and add the marinated meat. Stir-fry the meat until it is crumbly and well-cooked, breaking up any clumps. This step is crucial for achieving a good texture. For an even better flavor and to reduce any gamey smell, you can add 2 Tbsp of cooking wine (like mirin or rice wine) while stir-frying.

Once the meat is thoroughly cooked and crumbly, add 500g of gochujang. Reduce the heat to medium-low. Stir continuously to prevent sticking and ensure the gochujang is well incorporated with the meat. Taste the mixture and if you prefer it sweeter, add more oligosaccharide to your liking.

Prepare one handful of roasted peanuts by crushing them into smaller pieces. You can use any nuts you like, such as almonds or walnuts, for a different flavor and texture. Using a variety of nuts will enhance the overall taste and mouthfeel.
