Ingredients for Hearty Curry Rice
  • 2 medium potatoes
  • 1 medium onion
  • 1/3 zucchini
  • 1/4 red bell pepper
  • Generous amount of Vienna sausages (approx. 10-15)
  • 3 blocks of solid curry roux (or 100g)
  • 600ml – 800ml water (adjust to desired curry consistency)
  • 3 bowls of steamed rice
  • A little canola oil or cooking oil

Cooking Instructions

Step 1

First, let’s prepare the vegetables. Peel the potatoes and cut them into bite-sized pieces, about 2cm cubes. Make 2-3 diagonal slits on the Vienna sausages for a nice presentation. Dice the onion, zucchini, and red bell pepper into similar 2cm pieces. Heat 1-2 tablespoons of canola oil in a large pan over medium heat. Add the cubed potatoes and sauté for 2-3 minutes until they start to soften slightly. Then, add the rest of the chopped vegetables and the Vienna sausages to the pan and stir-fry everything together. This step helps to bring out the natural sweetness of the vegetables, enhancing the curry’s flavor.

Step 2

Once the vegetables are lightly sautéed, pour in 600ml of water and bring it to a boil over high heat. Once boiling, reduce the heat to medium and add the solid curry roux, breaking it into smaller pieces if necessary. Stir well until the curry blocks are completely dissolved. You can adjust the amount of water from 600ml up to 800ml depending on your preferred curry thickness and the type of curry roux used. It’s a good idea to start with 600ml and add more water as needed while cooking.

Step 3

Lower the heat to low. Continuously stir the curry with a spatula or ladle to prevent it from sticking to the bottom of the pan or clumping. This slow simmering process allows the curry to thicken gradually and lets the vegetables and sausages absorb the delicious flavors.

Step 4

Continue to simmer and stir over low heat for about 5 minutes. Once the curry reaches your desired consistency and the vegetables and sausages are well-infused with flavor, your delicious Curry Rice is ready! Turning off the heat and letting it rest for a moment can deepen the flavors further.

Step 5

Spoon the warm steamed rice into a serving bowl, pressing it down gently to shape it. Carefully invert the rice bowl onto a serving plate and use a spatula to gently lift the bowl, leaving a neat mound of rice. Generously ladle the prepared curry around the rice. Arrange the Vienna sausages in a circular pattern on top of the rice for a decorative touch. Finally, sprinkle some sesame seeds on top for a visually appealing finish.
