Main Ingredients

  • 100g well-fermented ripe kimchi
  • 1 large scallion (thick stalk)
  • 1 small block firm tofu
  • 50g Spam (about 1/2 can)
  • 1/2 medium onion

Cooking Instructions

Step 1

To make a delicious Scallion Kimchi Stew, first prepare all your ingredients meticulously. Cut the kimchi into bite-sized pieces, and prep the vegetables, Spam, and tofu.

Step 1

Step 2

Wash the scallion thoroughly. Cut it into roughly 2cm (about 0.8 inch) lengths, separating the white and green parts. Cutting them into larger pieces will give a better texture when cooked.

Step 2

Step 3

Slice the onion into thick strips. Cut the Spam into 1cm (about 0.4 inch) thick slices, then use a small cookie cutter for a cute flower shape, or dice it into 1cm cubes. Cut the tofu into similar sizes or shapes.

Step 3

Step 4

Spread out a piece of kimchi. Place some of the prepared scallions on top and roll it up tightly. Adjust the amount of scallion depending on the size of your kimchi piece.

Step 4

Step 5

In a pot or deep pan, heat 1 Tbsp of perilla oil over medium heat. Spread the sliced onions evenly across the bottom. Place the rolled kimchi rolls in the center.

Step 5

Step 6

Arrange the sliced Spam and tofu around the edges of the pot. If you cut out flower shapes, place them attractively on top, alternating between Spam and tofu. (If diced, arrange them around the kimchi rolls.)

Step 6

Step 7

Scatter the remaining scallions around the kimchi rolls to fill in the spaces. This will create a visually appealing and abundant stew.

Step 7

Step 8

Pour in the rice water until it covers the ingredients. Rice water helps to mellow the sharp acidity of the kimchi and adds a subtle depth of flavor.

Step 8

Step 9

Place the pot on the stove over medium-high heat and bring to a boil. Let it simmer vigorously for 10 minutes. The ingredients will cook, and a flavorful broth will develop.

Step 9

Step 10

After 10 minutes of simmering, add the gochugaru, fish sauce, dried shrimp powder, and brown sugar in the order listed. Adjust the amount of brown sugar based on how sour your kimchi is.

Step 10

Step 11

Continue to simmer for another 5 minutes after adding the seasonings. Taste the stew and adjust the final seasoning with a pinch of salt if needed. Your comforting and delicious Scallion Kimchi Stew is now complete! Enjoy it with a hot bowl of rice.
