Hearty Seolleongtang Tteok-Mandu Guk (Serves 2)

On chilly or rainy days, a steaming bowl of soup is just what you need. This Tteok-Mandu Guk (rice cake and dumpling soup) is incredibly easy to make at home using a store-bought Seolleongtang (ox bone broth) pack. It’s packed with meat, rice cakes, and dumplings, making it a satisfying meal!

Broth Ingredients

  • Store-bought Seolleongtang broth 500g (any brand is fine)
  • Water 200g (approx. 1 cup)

Main Ingredients

  • Beef for stew 150g
  • Tteokguk rice cakes 25 pieces
  • Frozen dumplings 6 pieces
  • Onion 1/4
  • Green onion 1/3 stalk
  • Black pepper, a pinch
  • Seasoned seaweed, a little

Cooking Instructions

In a large pot, combine the store-bought Seolleongtang broth (500g) and water (200g). Add the beef for stew (150g) and bring to a rolling boil over high heat. You can use any brand of Seolleongtang broth.

While the broth is heating, rinse the Tteokguk rice cakes (25 pieces) once under cold water and then soak them in clean water. (You can adjust the portion to about 10-15 cakes per person.)

Take the dumplings out of the freezer and have them ready. (3 dumplings per person, so 6 total is a good amount.)

Thinly slice 1/4 onion and cut 1/3 stalk of green onion into diagonal pieces. These will add flavor and freshness.

Once the broth starts boiling, use a ladle to skim off any brown foam that rises to the surface. This will make the broth clearer and more refined. (Don’t worry about removing every single bit.)

After skimming off the foam, add 1/2 tablespoon of minced garlic and then add the frozen dumplings to the pot. Cooking the dumplings first will add savory depth to the broth.

Once the dumplings have cooked a bit, add the soaked Tteokguk rice cakes and the sliced onion. If you’re using frozen rice cakes, add them directly to the boiling soup and cook until they are tender. (Adding some shredded carrots at this stage is also a nice touch if you have them.)

Continue to simmer until the Tteokguk rice cakes are soft and cooked through. By the time the rice cakes are done, the dumplings will also be heated thoroughly.

While the rice cakes and dumplings are cooking, thinly slice the seasoned seaweed with scissors to prepare it as a garnish. It adds a delicious final touch.

When the Tteokguk rice cakes are fully cooked, add the diagonally sliced green onions for the final seasoning. Let it simmer for another moment and then turn off the heat. The fresh aroma of the green onions will infuse into the soup.
