  • 1/2 tsp salt (for blanching bean sprouts)

Savory Seasoning Sauce

  • 5 Tbsp soy sauce
  • 2 Tbsp chopped green onions
  • 2 Tbsp minced chili pepper (adjust spiciness)
  • 1/2 Tbsp minced garlic
  • 1 Tbsp sesame oil
  • 1/2 Tbsp toasted sesame seeds
  • 1 Tbsp sugar (adjust sweetness)

First, let’s make the delicious seasoning sauce for your bean sprout rice. In a bowl, combine 5 Tbsp soy sauce, 2 Tbsp chopped green onions, 2 Tbsp minced chili pepper, 1/2 Tbsp minced garlic, 1 Tbsp sesame oil, 1/2 Tbsp toasted sesame seeds, and 1 Tbsp sugar. Mix everything thoroughly with a spoon. The flavor will deepen as the sauce rests.

Next, prepare the bean sprouts. In a pot, bring plenty of water to a boil. Once boiling, add 1/2 tsp salt and the 2 handfuls (about 150g) of bean sprouts. Cover and blanch for just 3-4 minutes to keep them crisp. Be careful not to overcook them, as they can become mushy. Immediately rinse the blanched bean sprouts under cold water to cool them down and drain well. Please do not discard the water used for boiling the bean sprouts; it will be used as cooking water for the rice, so keep it aside!

Now, let’s prepare for cooking the rice. Rinse 2 cups of rice under running water several times until clean. After rinsing, let the rice drain in a sieve for about 30 minutes to allow it to soak sufficiently. This step helps the rice cook evenly and taste better, so be sure to follow it.

Add the soaked rice to your rice cooker. Use the reserved water from boiling the bean sprouts as your cooking water. The basic ratio of rice to water is 1:1. However, keep in mind that the bean sprout water already has some flavor, so you might want to adjust slightly. Cook the rice as you normally would by pressing the ‘cook’ button. For an extra rich and fragrant rice, you can add about 1/2 Tbsp of butter or margarine while the rice is cooking (optional).

Once the rice is almost done and the ‘cook complete’ signal sounds, evenly spread the blanched bean sprouts over the top of the cooked rice. Cover the lid again and let it steam for about 5-10 minutes on very low heat, or press the ‘cook’ button again (while in ‘warm’ mode) to steam. This process allows the fresh flavor of the bean sprouts to infuse into the rice grains.
