As the season for fresh potatoes begins, we’ve made a delicious jjageuli (a thick stew) using potatoes, Spam, and pork. It’s packed with flavor and perfect for a hearty meal.

Main Ingredients
  • 2 Potatoes, cut into large, thick pieces
  • 1 can Spam (approx. 200g)
  • 100g Ground Pork
  • 5 Korean Green Chilies (Cheongyang peppers)
  • 1/2 stalk Green Onion
  • 1/2 Onion

Cooking Instructions

Step 1

First, peel the potatoes and cut them into large, thick pieces, about 2-3 cm thick. Since jjageuli is simmered for a while, it’s important to cut the potatoes thickly so they don’t fall apart.

Step 2

Peel the onion and slice it thinly into strips.

Step 3

Slice the green onion diagonally and finely chop the Korean green chilies (deseeded if you prefer less heat). Feel free to add more chilies if you enjoy a spicier dish.

Step 4

Open the Spam can and use the back of a knife to press down and mash the Spam. This helps its savory flavor meld into the stew and adds texture. (If you want to avoid getting oil on your hands, place the Spam in a plastic bag and mash it there for a cleaner process.)

Step 5

Heat a pan over medium-high heat and add a little cooking oil. Sauté the sliced garlic until fragrant, then add the ground pork, a pinch of salt, and pepper. Stir and break up the pork as it cooks.

Step 6

Once the pork is partially cooked, transfer it to a pot or deep pan. Add 500ml of water, the prepared potatoes, and onions. Mix in the soy sauce, doenjang, gochugaru, sugar, minced garlic (or sliced garlic), mirin, and gochujang, ensuring they are well combined. Stir in the mashed Spam and chopped green chilies. Bring to a boil over high heat, then reduce to medium-low heat and simmer until the ingredients are cooked through and the sauce has thickened, about 15-20 minutes.

Step 7

When the sauce has thickened to a stew-like consistency, stir in the sliced green onion and a drizzle of sesame oil for aroma. Mix gently and your delicious Spam and Potato Jjageuli is ready! It’s incredibly tasty served over a bowl of warm rice.
