Main Ingredients- 20 cloves Garlic
- 2 medium Potatoes
- 1/4 head Cabbage
- 1/2 Orange bell pepper
- 1/2 Red bell pepper
- 1 Green bell pepper
- 1 Red onion
- 15 Cherry tomatoes
- 1 pack Enoki mushrooms
- 1 jar Tomato pasta sauce (for 4 servings)
- 1 pack Pasta noodles (for 4 servings)
Cooking Instructions
Step 1
Heat a generous amount of olive oil in a deep skillet over medium heat until shimmering. Add the 20 whole garlic cloves and sauté until golden brown, infusing the oil with a rich garlic aroma. Stir the garlic occasionally to prevent burning.
Step 2
Wash the 2 potatoes thoroughly, then cut them into bite-sized cubes, about 2cm each. Add the cubed potatoes to the skillet and sauté them with the garlic.
Step 3
Cut 1/4 head of cabbage into 2cm cubes and add it to the skillet. Sautéing the cabbage will bring out its natural sweetness and improve its texture.
Step 4
Core and thinly slice 1/2 orange bell pepper, 1/2 red bell pepper, and 1 green bell pepper into strips. Add the sliced peppers to the skillet and sauté until their vibrant colors begin to appear.
Step 5
Peel and thinly slice 1 red onion into strips, approximately 0.5cm thick. Add it to the skillet. The red onion will add a pleasant crunch and sweetness.
Step 6
Remove the stems from 15 cherry tomatoes and wash them under running water. Add them whole or halved to the skillet. Sauté them with the other vegetables; they will slightly break down, contributing to the sauce’s base.
Step 7
Trim the base of 1 pack of enoki mushrooms and lightly rinse them. Separate any clumps. Add the enoki mushrooms to the skillet and stir-fry until they wilt. They will add a tender texture to the pasta.

Now, let’s prepare the delicious tomato pasta sauce. Have 1 jar of store-bought tomato pasta sauce ready, sufficient for 4 servings. (Example: Baekseol Tomato Pasta Sauce)

Pour the prepared tomato pasta sauce over the sautéed vegetables in the skillet. Reduce the heat to medium-low and let it simmer gently for about 5 minutes, allowing all the ingredients to meld together with the sauce. Taste and adjust seasoning with a pinch of salt if necessary.

While the sauce is simmering, cook the pasta noodles. In a large pot, bring plenty of water to a boil. Add a pinch of salt (about 10g of salt per liter of water) and a splash of olive oil. Once boiling, add 4 servings of pasta noodles and cook for approximately 8 minutes, or according to package directions minus 1 minute for al dente.
Step 11
Drain the cooked pasta noodles, reserving a little pasta water. Add the drained pasta directly to the skillet with the sauce. Toss well to coat the noodles evenly with the sauce.
