Hearty Tuna and Potato Jjigae Recipe
Baek Jong-won Style Tuna Potato Jjigae, Red Pepper Paste Stew Recipe

A delicious and spicy stew with a rich broth! Instead of Spam, we’re using tuna for a lighter and more flavorful potato jjigae. This is a perfect side dish that will have you finishing your rice in no time.
Main Ingredients- 3 medium potatoes
- 1/2 medium onion
- 1 chili pepper (like Cheongyang pepper for spice)
- 1 handful of green onions
- 1 can of tuna (drained)
- A little zucchini (optional)
Seasoning Ingredients- 1 Tbsp Gochujang (Korean red chili paste, heaped)
- 1/3 Tbsp Doenjang (Korean soybean paste)
- 2 Tbsp Gochugaru (Korean red chili flakes)
- 3 Tbsp Guk-ganjang or Soy Sauce
- 1 Tbsp Minced Garlic
- 1 Tbsp Sugar
- 3 paper cups of water (approx. 540ml)
- 1 Tbsp Gochujang (Korean red chili paste, heaped)
- 1/3 Tbsp Doenjang (Korean soybean paste)
- 2 Tbsp Gochugaru (Korean red chili flakes)
- 3 Tbsp Guk-ganjang or Soy Sauce
- 1 Tbsp Minced Garlic
- 1 Tbsp Sugar
- 3 paper cups of water (approx. 540ml)
Cooking Instructions
Step 1
First, drain the oil from the canned tuna and set it aside. Thinly slice half of an onion; adjust the amount based on its size. Peel the potatoes and cut them into bite-sized pieces. Be careful not to cut them too small, or they might become mushy.

Step 2
Slice the green onions diagonally to form about a handful. Finely chop the chili pepper to add a spicy kick.

Step 3
Start by layering the thinly sliced onions at the bottom of your pot or wok. This step helps to bring out the natural sweetness of the onions, making the stew even more flavorful.

Step 4
Arrange the bite-sized potato pieces evenly on top of the onions.

Step 5
Place the drained tuna on top of the potatoes. Now it’s time to add all the seasoning ingredients: 1 heaped tablespoon of Gochujang, 1/3 tablespoon of Doenjang, 2 tablespoons of Gochugaru, 3 tablespoons of soy sauce, 1 tablespoon of minced garlic, and 1 tablespoon of sugar.

Step 6
Carefully pour in 3 paper cups of water (approximately 540ml). Ensure there’s enough water to cover the ingredients for even cooking.

Step 7
If you have zucchini, slice it and add it to the pot. Feel free to add any other leftover vegetables you have on hand to make the stew even richer.

Step 8
Bring the stew to a boil over high heat. Once it starts boiling vigorously, reduce the heat to medium-low. Cover the pot and let it simmer until the potatoes are completely tender.

Step 9
Check if the potatoes are soft and cooked through. Add the chopped green onions and chili pepper, and simmer for a little longer to finish. Serve hot with a bowl of rice for a satisfying meal. Enjoy!
