Hearty Tuna Doenjang Stew (Gangdoenjang)

Main Ingredients

  • 1 can Tuna (drained)
  • 1/2 stalk Green onion (white part)
  • 1/2 Onion
  • 1/2 Korean zucchini (Aehobak)
  • 3 Cheongyang peppers (adjust to spice preference)
  • 1 pack Soft tofu (Sundubu)
  • 200ml Water

Seasoning

  • 1 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Doenjang (Korean soybean paste)
  • 1/2 Tbsp Gochugaru (Korean chili powder)
  • 1/2 Tbsp Sugar
  • 1 Tbsp Perilla oil

Cooking Instructions

Step 1

First, wash and prepare all the vegetables. Mince them into small pieces, about the size that makes them easy to mix with rice. For the green onion, focus on the white parts. Dice the onion and Korean zucchini into approximately 0.5cm cubes. Seed the Cheongyang peppers and mince them finely. Chopping them small helps the flavors meld together and makes for a better eating experience.

Heat a pan over medium-low heat and add 1 tablespoon of perilla oil. Add all the prepared vegetables (green onion, onion, Korean zucchini, and Cheongyang peppers) and sauté them. Stir-fry for about 2-3 minutes until the vegetables soften and become fragrant. This step really brings out their flavor.

Once the onions start to turn translucent, add the seasoning ingredients: 1 tablespoon of doenjang, 1 tablespoon of gochujang, 1/2 tablespoon of gochugaru, and 1/2 tablespoon of sugar. Stir and cook the seasonings with the vegetables for about 1 minute over low heat, being careful not to burn them. It’s good to make the seasoning a bit strong since you’ll be adding soft tofu later.

Add the drained tuna (1 can) and the soft tofu (1 pack) to the sautéed mixture. Pour in 200ml of water. You can add the soft tofu in large chunks using a spoon, or gently break it up with your hands. Stir everything together well.

Bring the stew to a boil over medium heat, then reduce the heat to low and simmer gently for 5-7 minutes. Continue to cook until the liquid thickens and the flavors have melded together, creating a rich Gangdoenjang. Serve generously over a bowl of rice and mix well for a delicious and satisfying meal!
