This is an incredibly simple vegetable curry recipe that you can quickly make with just the vegetables you have on hand. Main Ingredients- 2 medium potatoes
- 1 medium onion
Curry & Sauce- 100g curry powder (or 4-5 blocks of solid curry)

Cooking Instructions
Step 1
First, peel the onion and slice it thinly. Heat a generous amount of cooking oil in a pan over medium heat, then reduce to low heat and sauté the onions until they turn a deep brown. Slowly caramelizing the onions like this is the secret to a richer flavor.
Step 2
Peel the potatoes and cut them into small, bite-sized cubes (about 1.5cm). Add the cubed potatoes to the sautéing onions and cook them together.

After stir-frying the potatoes for about 2-3 minutes, add 3 tablespoons of tomato sauce and continue to cook. Sauté until the tangy aroma of the tomato sauce mellows out and a slight sweetness emerges. This step enhances the curry’s savory depth.
Step 4
Now it’s time to add the curry powder. The cooking method varies slightly depending on the type of curry you’re using. If you’re using curry powder, add it now and stir-fry. If you’re using solid curry blocks, add them at this stage and pour in the water immediately after.

Keep the heat on low to prevent the curry powder from burning. Stir gently and continuously to evenly coat the ingredients with the curry powder. Lightly toasting the curry powder in oil brings out an even more intense flavor.

Now, carefully pour in 3 bowls of water (approximately 600ml).

If there are any clumps of curry powder, make sure to dissolve them thoroughly before the curry comes to a boil. This is an important step for achieving a smooth curry rice.

Turn the heat up to medium and bring the curry to a boil, stirring occasionally. Once it boils, reduce the heat to low and let it simmer gently for about 20 minutes, or until the potatoes are tender enough to be easily pierced with a fork. Remember to stir periodically to prevent sticking.
