Ingredients

  • 2 fresh eggs
  • 1/2 medium potato (approx. 50-70g)
  • 1/4 fresh onion (small size)
  • 4 cherry tomatoes
  • 1/4 chicken breast (approx. 30-40g)
  • 1 tablespoon olive oil
  • A pinch of salt
  • A pinch of freshly ground black pepper
  • A pinch of dried parsley flakes (for garnish)
  • 1/2 slice of processed cheese

Cooking Instructions

Step 1

First, wash the potato thoroughly (you can leave the skin on if preferred) and then julienne it into thin strips. Soaking these julienned potatoes in cold water for about 10 minutes will help remove excess starch, leading to a crispier texture.

Step 1

Step 2

Next, thinly julienne the onion, just like the potato. Cut the cherry tomatoes into quarters. Finely mince the chicken breast so it integrates well into the rösti without being too chunky.

Step 2

Step 3

Drain the julienned potatoes completely. Place them in a bowl with the julienned onion. Season with a pinch of salt and pepper, then mix well. This seasoning will enhance the flavor and balance any slight bitterness from the potato.

Step 3

Step 4

Heat your non-stick pan over medium-low heat and add 1 tablespoon of olive oil. Spread the seasoned potato and onion mixture evenly across the bottom of the pan. Ensure there are no gaps, as this forms the base of your rösti. Let it cook gently.

Step 4

Step 5

Arrange the minced chicken breast and quartered cherry tomatoes attractively over the potato-onion base. Crack the two eggs directly onto the mixture, ensuring the yolks remain intact. Place half a slice of cheese over the eggs, and finally, sprinkle with dried parsley flakes for a touch of color and aroma.

Step 5

Step 6

Cover the pan with a lid and reduce the heat to low. Cook for approximately 5 minutes, or until the egg whites are fully set and the cheese has melted beautifully. Your delicious Egg Rösti is ready to serve! Enjoy it while it’s warm for the best taste.
