First, thoroughly wash the chestnuts under running water to remove any dirt or debris. Place the washed chestnuts in a bowl and soak them in water for about 1 hour. This soaking process softens the shells, making it much easier to score them in the next step.

After soaking for an hour, use a sharp knife to make a single, lengthwise score down the rounded side (the ‘belly’) of each chestnut. You can also opt for a ‘+’ shaped cross-cut. I tried both, and the single vertical score seemed to help the shell split open more effectively. Be careful not to cut too deep into the nut itself.

Now, place the scored chestnuts in your air fryer basket, preferably lined with parchment paper for easy cleanup. Preheat your air fryer to 200°C (392°F) and then roast the chestnuts for about 15 minutes. Flipping them halfway through can help ensure even cooking.
