  • 260g dark or milk chocolate
  • 5 Tbsp cocoa powder
  • 5 Tbsp sugar
  • 2 Tbsp water
  • 2 Tbsp butter

In a small saucepan, combine the sugar (5 Tbsp) and water (2 Tbsp). Heat over medium-low heat and stir until the sugar is completely dissolved. Be careful not to burn the sugar.

Once the sugar syrup begins to bubble gently, add the almonds. Stir continuously with a wooden spoon or spatula. As the syrup cooks down, it will start to form white crystals on the almonds. This ‘candy coating’ process makes them extra crispy. Continue stirring for about 2-3 minutes until a good amount of crystallization occurs.
