Step 1
Start by preparing 2 burdock roots. Gently scrub the skin with a soft brush to clean them thoroughly. It’s best to use the burdock with its skin on, as this enhances both the flavor and nutritional value.

Slice the thicker parts of the burdock in half lengthwise, then thinly slice them crosswise to about 0.3 cm (1/8 inch) thickness. Slice the thinner parts diagonally and thinly. Aim for uniform thickness to ensure even drying and roasting.

Bring a pot of water to a rolling boil and add a small amount of vinegar. Blanch the sliced burdock for just 10 seconds. This quick blanching helps to effectively remove any earthy smell from the burdock.

Immediately rinse the blanched burdock under cold running water to cool it down. Gently pat it dry with paper towels. Then, place it in a food dehydrator or air fryer and dry for 4-5 hours until completely crisp. Ensure it’s thoroughly dried inside and out.

Once the burdock is thoroughly dried, place it in a dry pan (no oil needed) over low heat. Roast it gently for about 10 minutes, or until a pleasant nutty aroma is released. Stir occasionally to prevent burning.

Transfer the roasted burdock to a wide tray and let it cool completely. Repeat this roasting and cooling process 7 times. Tip: Doing this all in one go can be tiring, so consider dividing the process over two days.
