Ingredients

  • 1kg chicken breast
  • 2 Tbsp dried pollack powder
  • 1 Tbsp veggie mix
  • 1 Tbsp coconut slices
  • A little vinegar

Cooking Instructions

Step 1

First, prepare 1kg of chicken breast. Fill a bowl with cold water, add a couple of drops of vinegar, and soak the chicken breast for about 20 minutes. This helps to sanitize and remove any gamey odor, ensuring the chicken breast is fresh and hygienic.

After 20 minutes, rinse the chicken breast thoroughly under running water. Drain it well, then cut it into manageable pieces. Use a food processor (mincer) to finely grind the chicken breast. Set aside about 3-4 pieces of the chicken breast whole, and mince the rest until very fine. This will allow you to create treats with different textures.

[1. Dried Pollack Chicken Breast Sticks] Divide the ground chicken breast in half. To one half, add 2 tablespoons of dried pollack powder.

Knead the chicken breast with the dried pollack powder until well combined. Ensure the pollack flavor is evenly distributed throughout the chicken breast mixture.

Place the mixture into a zip-top bag. Use a rolling pin to flatten it as thinly and widely as possible. Flattening it thinly makes it easier to cut and dehydrate later. Once flattened, place the entire bag in the freezer for about 3 hours to freeze.

After 3 hours, take the frozen, flattened chicken breast mixture out of the freezer. Use a knife to cut it into thin stick shapes as desired. The slightly frozen texture makes cutting much easier.

Place the cut stick-shaped treats into a food dehydrator. Dehydrate at 70°C (158°F) for approximately 7 hours. Adjust the drying time based on the thickness of the treats.

[2. Chicken Breast Sticks] Take out the 3-4 pieces of chicken breast that were set aside earlier. These pieces will not be ground. Cut them into your desired shapes and sizes with a knife. Slice them thinly, place them in the dehydrator, and dehydrate thoroughly at 70°C (158°F) for about 12 hours. These treats will have a chewier texture.

[3. Coconut Chicken Balls] Use the other half of the ground chicken breast (the portion without dried pollack powder) that was divided earlier for the pollack chicken breast sticks.

Shape the ground chicken breast into bite-sized round balls. Place 1 tablespoon of coconut slices decoratively on top of each chicken ball. Place these coconut chicken balls in the dehydrator and dehydrate at 70°C (158°F) for about 7 hours.

Let’s recap the dehydration times for the treats we’ve made: 1. Dried Pollack Chicken Breast Sticks – Dehydrator 70°C for 7 hours. 2. Chicken Breast Sticks – Dehydrator 70°C for 12 hours. 3. Coconut Chicken Balls – Dehydrator 70°C for 7 hours.

[4. Vegetable Chicken Breast Sausages] To the remaining ground chicken breast, add 1 tablespoon of veggie mix and knead thoroughly. Once the mixture is well-combined, wrap it tightly in plastic wrap to form a sausage shape. Seal the ends securely, then place it in a steamer and steam for about 20 minutes!
