Cooking Instructions
Step 1
First, prepare your dark and milk chocolates. Set up a double boiler by placing a heatproof bowl over a saucepan of simmering water. Add the chocolates to the bowl and melt them slowly, stirring gently to prevent scorching. Ensure the water temperature is kept moderate.
Step 2
Melt the strawberry flavored Chocolatier using the same double boiler method. This will add a subtle fruity aroma and sweet flavor to your chocolates. Set aside separately from the other melted chocolates.
Step 3
Tempering is a crucial step for achieving glossy, smooth, and snappy chocolates. After melting, remove the chocolate bowl from the heat and place it over a bowl of cold water, stirring until the temperature drops to about 31-32°C (88-90°F). Then, return the bowl to the warm water and heat it gently to 40-45°C (104-113°F), stirring constantly. This process ensures your chocolate sets beautifully.
Step 4
Once tempered, transfer the chocolate into a piping bag. If you don’t have a piping bag, a plastic bag with a corner snipped off will also work. Work quickly as tempered chocolate is sensitive to temperature changes.
Step 5
Carefully pipe the chocolate into your silicone molds. Fill them as desired, but avoid overfilling. Gently tap the mold on the counter to release any air bubbles and create a smooth surface. Allow the chocolates to set at cool room temperature for 3-4 hours, or in the refrigerator for about 1 to 1.5 hours.
Step 6
Let’s make some truffle chocolates! The milk truffle shells are hollow chocolate spheres. Gently warm the green tea ganache in a little warm water, then pipe it into the truffle shells. Once the ganache has set, dip the filled shells into your tempered chocolate (dark or milk) to coat them completely. This creates a delightful truffle confection.
Step 7
Carefully unmold your set chocolates. Look at these beautifully formed treats!
Step 8
For an extra touch, you can dip your set chocolates (or the strawberry Chocolatier) into the melted dark chocolate to create a two-toned effect. This not only adds another layer of flavor but also makes for a visually striking chocolate, combining pink and dark chocolate. Place your finished chocolates in a decorative box and present them to someone special.
