Homemade Creamy and Nutty Soy Milk Noodles (Kongguksu)
A Summer Delicacy: Easy Homemade Soy Milk Recipe Rich in Protein and Deliciously Nutty
Making soy milk at home doubles the nutty flavor, resulting in an incredibly delicious and satisfying dish.
Ingredients- 2 cups Dried Soybeans (Baektae)
- Cucumber (for garnish, optional)
- Sea Salt (to taste)
- 1/2 cup Roasted Peanuts (for extra nuttiness)
Cooking Instructions
Step 1
First, prepare 2 cups of fresh dried soybeans (Baektae) and wash them thoroughly. Place the washed beans in a container, cover with plenty of water, and soak them in the refrigerator overnight (for at least 8 hours) until fully plumped. This step softens the beans, making them easier to blend later.
Step 2
Transfer the soaked soybeans to a pot. Add 4 cups of fresh water and half a tablespoon of sea salt. Bring the mixture to a boil over high heat.
Step 3
Once boiling, reduce the heat to medium and continue to simmer for about 5 to 7 minutes. Be careful not to overcook the beans until they become too mushy. This process helps remove any beany smell and softens them.
Step 4
As the beans cook, their skins will start to float to the surface. Gently skim off these skins using a sieve. Reserve the cooking water separately. Then, carefully drain the cooked beans and rinse them 2-3 times under cold running water to remove any remaining skins and impurities. Drain the rinsed beans well.
Step 5
To enhance the nutty flavor, roast half a cup of raw peanuts in a pan or oven until golden brown. Rub the roasted peanuts between your hands to remove their skins. (You can skip this step if you don’t have roasted peanuts, but it significantly boosts the nutty taste.)
Step 6
Now, in a blender, combine the cooked soybeans, 5 cups of fresh water, 2 cups of the reserved soybean cooking water, and the roasted peanuts. Blend until very smooth. Depending on your blender’s power, you might need to blend in batches.
Step 7
If all ingredients don’t fit in your blender at once, divide them into two or three batches and blend until you achieve a fine consistency. You can adjust the thickness of the soy milk by adding more fresh water or reserved cooking water as needed.
Step 8
Adjust the consistency of the soy milk to your preference by adding more fresh water if you desire a thinner consistency, or reducing the amount of water for a thicker, richer result.
Step 9
Pour the prepared soy milk generously over cooked noodles. Season to your taste with sea salt. For a refreshing touch, you can garnish with thinly sliced cucumber.
