Ingredients

  • 2 Tbsp All-purpose flour (approx. 20g)
  • 300ml Fresh milk
  • 3 Fresh egg yolks (room temperature)
  • 50g Unsalted butter (room temperature or slightly softened)
  • 5 Tbsp Granulated sugar (approx. 50g)

Cooking Instructions

First, carefully separate the 3 egg yolks into a bowl. Add 2 tablespoons of flour and 5 tablespoons of sugar. Whisk together until smooth and well combined, ensuring there are no lumps. Try not to overmix; it’s good to whisk until the sugar is partially dissolved.

In a separate bowl, combine 300ml of milk and 50g of butter. Microwave for about 1 to 1.5 minutes until the butter is melted. (Alternatively, heat gently in a saucepan over low heat.) Once the milk and butter are warm, gradually pour them into the egg yolk, flour, and sugar mixture from Step 1 while whisking continuously. Pouring too quickly can cause the eggs to cook, so add it slowly and whisk until smoothly incorporated.

This step is optional but highly recommended for added flavor. Add about 1/2 teaspoon of vanilla syrup, vanilla extract, or vanilla oil if you have it on hand. The vanilla complements the creamy texture and enhances the overall sophisticated flavor of the custard.

Transfer the well-mixed cream mixture to a saucepan and cook over low heat. If using a microwave, heat in 30-second intervals, stirring between each, and check the consistency. When cooking on the stovetop, constant stirring is crucial to prevent burning.
