I made these delicious homemade energy bars using the nuts I had at home. They were perfect as a satisfying breakfast alternative. This recipe is a fantastic way to create a healthy, portable snack packed with goodness.

  • Approx. 1 handful walnuts (about 30g)
  • Approx. 1 handful Brazil nuts (about 30g)
  • Approx. 6 Tbsp roasted oats (or quick oats)
  • Approx. 1/3 cup oligosaccharide or honey (about 1/3 of total ingredient volume)

Start by preparing the almonds. Take about a handful of almonds and place them on a cutting board. Using a knife, coarsely chop them into bite-sized pieces. You don’t need to mince them finely; a slightly chunky texture is desirable for better mouthfeel.

Next, prepare the Brazil nuts. Similar to the almonds, take about a handful and chop them into appropriate sizes with a knife. This recipe is very flexible, so feel free to use any nuts you have on hand or prefer.

Chop the walnuts, also about a handful, into pieces that are easy to eat. Be careful when chopping to avoid any injuries.

Now, heat a pan over medium heat. Add the chopped almonds, Brazil nuts, and walnuts to the pan and toast them for about 1 minute. This step enhances their nutty aroma and flavor. Be careful not to burn them.

To the toasted nuts, add about 6 tablespoons of roasted oats (or quick oats). Roasted oats add a delightful crunch and a deeper, toasted flavor.

Now, pour in the oligosaccharide (or honey) for sweetness. Use about 1/3 of the total volume of your ingredients. Adjust the amount carefully, as too much can make the bars overly sticky.

Stir everything together over medium-low heat for about 3 minutes, or until the mixture becomes thick and sticky. The oligosaccharide should reduce and bind the ingredients. Cook until it’s almost completely absorbed and the mixture starts to clump together. Remove from heat promptly to prevent burning.

Lay a piece of parchment paper on a flat surface. Pour the cooked mixture onto the parchment paper. Use a spatula or scraper to spread it out as evenly and flatly as possible. A thinner layer will be easier to cut later.
