  • 250g fresh figs (about 8 medium figs)
  • 250g granulated sugar (equal weight to figs)
  • 1 Tbsp lemon juice
  • 0.5 Tbsp salt

Start by washing 8 fresh figs (approximately 250g). You can finely chop them or pulse them in a food processor, leaving some texture. Don’t worry about achieving a perfectly smooth puree, as the figs will break down further as they cook.

Process the washed figs until they are roughly chopped or mashed, retaining some small pieces for texture.

Measure out an equal weight of sugar as the figs you have (250g). This 1:1 ratio is standard, but you can adjust the sugar slightly depending on the sweetness of your figs and your preference.

In a bowl, combine the processed figs, the measured sugar, 1 tablespoon of lemon juice, and 0.5 tablespoon of salt. Stir everything together until well combined. The lemon juice adds a bright note and helps preserve the jam’s lovely color.

Carefully pour the fig and sugar mixture into the inner pot of your rice cooker.

Select the ‘Reheat’ function on your rice cooker. Let it run for 9 minutes. Repeat this ‘Reheat’ cycle three times, for a total cooking time of approximately 27-30 minutes. The reheat function is ideal because it doesn’t release steam, allowing the jam to thicken safely without boiling over. It’s a good idea to stir the jam occasionally when you open the lid to prevent sticking to the bottom.

Once the cooking cycles are complete, turn off the rice cooker and let the jam cool completely inside the pot. Leaving it overnight or for several hours ensures it thickens properly.
