Grapefruit Marmalade Ingredients- 4 fresh grapefruits
- 1kg sugar (adjust to your preference)
- 1 tsp sea salt (do not use flavored salts)
- 2 Tbsp bottled lemon juice (optional, adjust to taste)
- 4-5 Tbsp baking soda (for cleaning)
Cooking Instructions
Step 1
Begin by thoroughly cleaning the grapefruits. Sprinkle about 1 tablespoon of baking soda onto each grapefruit and gently rub the surface with your hands or a soft sponge. Although we won’t be using the peel, a thorough wash is essential to remove any pesticides or debris that might transfer to the pulp.
Step 2
After washing, pat the grapefruits completely dry with paper towels. Ensuring the grapefruits are dry helps to preserve the marmalade for a longer period.
Step 3
Trim off the top and bottom ends of each grapefruit. Carefully peel the outer skin, making sure not to cut too deep into the flesh.

This is the most meticulous step: gently separate the grapefruit segments and meticulously remove all the small seeds. The less white pith you include, the less bitter your marmalade will be. Patience here is key to a smooth, flavorful result. Tip: For an added zest, you can finely mince the outer peel (after washing) and add it to the mixture.

Place the carefully segmented grapefruit pulp into a large bowl. Handle the segments gently to prevent them from breaking apart, preserving their delightful texture.

Add an equal weight of sugar to the grapefruit segments and juice. Also, add 1 teaspoon of sea salt. The salt enhances the sweetness and complexity of the grapefruit. **Important:** Use only pure sea salt. Avoid using flavored salts like ‘mat-so-geum’ (seasoned salt) or bamboo salt, as they can alter the taste. Use natural sea salt for the best flavor.

If you desire an extra touch of tartness, stir in 2 tablespoons of bottled lemon juice. This is entirely optional and can be adjusted based on your personal preference.

Stir everything together gently but thoroughly until the sugar is completely dissolved. Ensure all the sugar crystals have melted into the grapefruit mixture.

Transfer the grapefruit marmalade into sterilized glass jars or airtight containers. Let it sit at room temperature for about half a day to a full day, allowing the sugar to fully dissolve.
