  • 2 Tbsp Sugar (approx. 30g, or to taste)

Pour 500ml of milk and 250ml of heavy cream into a clean saucepan. Add 2 tablespoons of sugar (about 30g) and mix well with a whisk or spatula until the sugar is dissolved and there are no lumps.

Now it’s time to add the matcha powder, 2 teaspoons (5-10g). Whisk thoroughly until the matcha powder is fully incorporated and there are no clumps. The color will be pale at first but will deepen as it cooks.

Place the saucepan with all the ingredients over low heat. This is the crucial step! Never boil over high heat, as it can burn or stick to the bottom. Maintain low heat and stir continuously with a spatula, ensuring you scrape the bottom of the pot.

Gently and patiently simmer over low heat for about 30 to 40 minutes, stirring constantly. Do not stop stirring! When a thin film forms on the surface or you feel a slight resistance at the bottom of the pot, it’s almost ready.

The jam will thicken further as it cools, so it’s best to remove it from the heat when it’s slightly thinner than your desired final consistency. Generally, when the mixture has reduced by about one-third of its original volume, it’s at a good consistency. Test by lifting a spatula; it should drip off in thick ribbons.
