Healthy Strawberry Ice Bars Made with Yogurt at Home
It might seem a bit early in the season, but strawberries are in their prime right now! These ice bars are a fantastic homemade snack for your children. Made with yogurt or sour cream and fresh fruit, these bars are free from E. coli concerns and packed with nutrition. Let us show you how to create these wholesome, delicious ice bars.
Ingredients- 200g Strawberry Yogurt (or 200g Sour Cream)
- 3/4 cup Orange Juice
- 1 tsp Vanilla Extract
- 350g Frozen Strawberries or Frozen Mango
- 2 Tbsp Sugar (adjust to taste)
- 6-7 Wooden Sticks
Cooking Instructions
Step 1
In a blender, add the strawberry yogurt (or sour cream), followed by 3/4 cup of orange juice. Add 1 teaspoon of vanilla extract. Blend briefly until just combined and smooth.
Step 2
Next, add 350g of frozen strawberries (or mango) and 2 tablespoons of sugar. Blend again until the fruit is finely pureed. If you prefer some texture, you can leave the fruit slightly chunkier.
Step 3
Carefully pour the ice bar mixture into mini paper cups or attractive ice pop molds. Filling them almost to the top is fine, but leave a tiny bit of space as the mixture will expand slightly when frozen. Place the filled molds in the freezer to begin the freezing process.
Step 4
After about an hour, when the mixture has started to freeze and firm up, insert the wooden sticks into the center of each ice bar. It’s important to do this while the bars are partially frozen so the sticks stand upright. Return them to the freezer until completely solid. (Tip: If you don’t have dedicated ice pop molds, you can find affordable ones at stores like Daiso.)

Using sour cream instead of yogurt lends a wonderfully smooth and rich flavor that beautifully complements the fruity tartness. This homemade treat offers a delightful alternative to store-bought ice candies, providing a unique and refreshing taste experience.
