Cooking Instructions
Step 1
Crack 2 fresh eggs into a bowl. Add a pinch of salt and gently whisk until slightly frothy. Be careful not to over-whisk, as this will ensure a softer texture.
Step 2
Prepare the vegetables for added color and flavor. Finely chop the scallions. Cut the bell pepper and tomato into bite-sized pieces, or slightly smaller, so they blend well in each mouthful. You can leave the tomatoes a bit chunkier if you prefer.
Step 3
Heat 1-2 tablespoons of cooking oil in a frying pan over medium heat. Add the chopped scallions and bell pepper, and stir-fry until fragrant. Once the vegetables begin to release their sweetness, add the chopped tomatoes, salt, and pepper. Continue to stir-fry for another 2-3 minutes until the tomatoes are slightly softened. Avoid overcooking at this stage to prevent the tomatoes from becoming mushy.
Step 4
Once the vegetables are nicely sautéed, push them to one side of the pan or temporarily transfer them to a separate bowl. Pour the whisked egg mixture into the empty part of the pan. Using chopsticks or a spatula, gently scramble the eggs until they are about 70-80% cooked and still moist. Then, mix the scrambled eggs with the stir-fried vegetables. The key is to stop before they are fully cooked to maintain a tender texture.
Step 5
Finally, drizzle in about 1/2 tablespoon of sesame oil for a nutty aroma and sprinkle with toasted sesame seeds. Gently mix everything together. Transfer the finished tomato and egg stir-fry to a nice serving dish and sprinkle with black sesame seeds for a beautiful presentation. Serve immediately while warm for the best taste.
Step 6
Here is the beautifully finished tomato and egg stir-fry, looking absolutely appetizing! Enjoy it as a satisfying meal with a bowl of warm rice.
Step 7
A warm and savory soup, Perilla Seed and Dried Radish Greens Soup. The combination of dried radish greens and perilla seeds creates a deep and rich flavor.
Step 8
This hearty and nutritious soup adds a sense of fullness to your meal. It’s perfect as a hangover remedy or as a satisfying meal on its own.
Step 9
Here are the fresh mackerel fillets that were kept in the refrigerator. They’ve been thawed and washed thoroughly, ready for grilling.
Step 10
Lightly coat a heated frying pan with cooking oil. Place the mackerel fillets in the pan. Grill over medium heat until golden brown and crispy on both sides. Starting with the skin side down can result in extra crispiness. Ensure good ventilation while cooking to minimize any fishy odors.
Step 11
The grilled mackerel is perfectly cooked, golden brown and appetizing on both sides. It’s crispy on the outside and moist on the inside. Enjoy it immediately while it’s hot!
