  • 500ml pitted dried jujubes (red dates)

Seasoning & Other Ingredients

  • 800ml water
  • 400ml white sugar
  • 100ml Mascobado sugar (unrefined brown sugar)
  • 3 Tbsp ginger powder
  • 200ml honey

Cooking Instructions

Step 1

Prepare the jujubes, the star ingredient of today’s recipe. We’ll be measuring the quantities using a 500ml measuring cup. Using fresh, high-quality jujubes will result in an even more delicious syrup.

Step 1

Step 2

To achieve a deep flavor in our jujube ginger syrup, we’ll combine white sugar, Mascobado (unrefined brown sugar), ginger powder, and honey for simmering. If you prefer a richer, darker colored syrup, consider mixing yellow or brown sugar with the white sugar.

Step 2

Step 3

Thoroughly clean the jujubes by soaking them in a mixture of water with baking soda and citric acid for at least 5 minutes. This process helps remove any surface impurities or residual pesticides, ensuring the jujubes are safe to use.

Step 3

Step 4

After soaking, rinse the jujubes several times in clean water, agitating them gently. It’s especially important to clean out any dirt trapped in the wrinkles. You can even use a toothbrush to meticulously clean between the crevices.

Step 4

Step 5

Gently pat the rinsed jujubes dry with paper towels. Ensuring they are well-dried is important as excess moisture can affect the simmering process later.

Step 5

Step 6

Remove the stems from the jujubes. Then, make a lengthwise cut down the side of each jujube. After making the cut, carefully slice around the outside to peel away the flesh, which will naturally separate the seed.

Step 6

Step 7

Following this method, you’ll find that the seeds separate from the jujube flesh quite easily.

Step 7

Step 8

Gather the jujube flesh that has been separated from the seeds.

Step 8

Step 9

Hold on! Don’t discard the jujube seeds just yet. These seeds can be used to create an even more flavorful jujube ginger syrup.

Step 9

Step 10

Gather several pieces of the pitted jujube flesh together and thinly slice them into julienne strips. The thinner the slices, the better the flavors will infuse into the syrup.

Step 10

Step 11

The julienned jujube flesh now fills the 500ml measuring cup to the brim. This amount will make a delicious batch of jujube ginger syrup.

Step 11

Step 12

Now, let’s utilize the jujube seeds. Add the seeds to 800ml of water and boil over high heat for 10 minutes. After boiling, strain out the seeds, keeping only the flavorful infused water. Using this water will significantly deepen the taste of your jujube ginger syrup.

Step 12

Step 13

Add the julienned jujubes to the pot containing the jujube seed-infused water.

Step 13

Step 14

Add the white sugar according to the measurement. You can adjust the amount of sugar to your preference, but using the right proportion is key to achieving the perfect consistency and taste.

Step 14

Step 15

Add the Mascobado (brown sugar) for a deeper, richer flavor. The brown sugar will also give the jujube ginger syrup a more appetizing color and enhance its taste profile.

Step 15

Step 16

Finally, add the ginger powder. Stir everything together until well combined, then begin simmering over medium heat. (Tip: While using fresh ginger, peeled and sliced, offers a more robust aroma, it’s quite labor-intensive. Ginger powder is a convenient alternative that still yields excellent flavor and fragrance!)

Step 16

Step 17

As the mixture simmers, skim off any foam that rises to the surface. Removing the foam will result in a clearer and cleaner jujube ginger syrup.

Step 17

Step 18

Using a spatula, stir the mixture occasionally to prevent it from sticking to the bottom of the pot. Reduce the heat to medium-low and let it simmer gently. It’s crucial to simmer slowly and carefully to avoid burning.

Step 18

Step 19

Once the liquid has reduced to about one-third of its original volume and has thickened to a syrupy consistency, turn off the heat. Stir in the honey until fully incorporated. Adding honey will make the jujube ginger tea even smoother and more flavorful.

Step 19

Step 20

After the syrup has completely cooled, transfer it into sterilized glass jars and store it in the refrigerator. This way, you can enjoy delicious jujube ginger tea throughout the winter.

Step 20

Step 21

Jujubes and ginger are known for their warming properties. They are particularly beneficial for individuals who tend to feel cold or have poor circulation, making this a great winter health remedy.

Step 21

Step 22

With this jujube ginger syrup, you can enjoy a warm and healthy winter without worrying about colds! While pitting the jujubes can be a bit tedious, using ginger powder makes the process surprisingly quick and easy. Take care of your health this winter with this delicious jujube ginger syrup! ^^
