Main Ingredients- 1/5 onion (finely minced)

Sauce Seasoning- 1 Tbsp sugar (adjust to your preference)
- Generous amount of mayonnaise (approx. 3-4 Tbsp, or to taste)
- 1 Tbsp plum extract (adds a sweet and tangy depth)

Cooking Instructions
Step 1
Begin by preparing the onion and pickle. Finely mince the onion and soak it in cold water for about 5 minutes to mellow its sharpness. Squeeze out any excess water. Similarly, finely mince the Korean cucumber pickle (or dill pickle), removing the seeds, and gently squeeze out any moisture. Mincing the ingredients very finely will result in a smoother and more delicious sauce.
Step 2
In a bowl, combine the finely minced onion and pickle (or dill pickle). Add 1 Tbsp sugar, a generous amount of mayonnaise (about 3-4 Tbsp), 1 Tbsp plum extract, and 1 Tbsp vinegar. Whisk or stir with a spoon until all the ingredients are well incorporated and the sauce is smooth. Ensuring everything is thoroughly mixed is key for the best flavor.
Step 3
The sauce might seem a bit thin initially. Add more mayonnaise, a little at a time, until you achieve your desired consistency. I found I needed to add a bit more mayonnaise to reach my preferred thickness. Once mixed, refrigerate the sauce for at least 15-30 minutes to allow the flavors to meld and deepen. This tartar sauce is perfect for dipping lobster, fried fish, or serving with salads!
