I’ve been thinking about making these for a while, and today I finally got up early and started making mashed potato croquettes after a thorough cleaning. Since it was the day for a Naver TV upload, filming the process took about 2 hours. It was a busy day with calls and messages coming in, as if they knew I was busy!

Ingredients
  • 9 Potatoes
  • 1/2 tsp Sugar (for boiling potatoes)
  • Pinch of Salt (for boiling potatoes)
  • 2 slices Sandwich Ham
  • 1/4 Onion
  • 1/4 Carrot
  • Small amount of Green Onion
  • Flour (for coating)
  • 2 Eggs
  • Breadcrumbs (for coating)
  • Cooking Oil (for frying)

Cooking Instructions

Step 1

Let’s start with the base for our delicious croquettes: the potatoes! Place the potatoes in a pot with plenty of water. Adding a pinch of salt and sugar while boiling helps to season the potatoes from the inside, making them even tastier. We’ll use 7 out of the 9 boiled potatoes for our croquettes.

Step 2

Once the potatoes are cooked through, it’s time to mash them! If you don’t have a masher, use the back of a ladle while the potatoes are still warm to mash them smoothly. It’s important to mash them thoroughly until there are no lumps for a creamy texture.

Step 3

Now, let’s prepare the fillings for our croquettes. Finely dice the sandwich ham. Similarly, chop the onion and carrot into small, even pieces, similar in size to the ham. A bit of finely chopped green onion will add a lovely aroma.

Step 4

Combine the finely diced ham, onion, carrot, and green onion with the mashed potatoes. Mix everything together thoroughly, kneading slightly to ensure all ingredients are well incorporated. Taste the mixture and add a pinch of salt or pepper if needed. If serving to children, it’s best to keep the seasoning mild.

Step 5

Now it’s time to shape the croquettes! Take spoonfuls of the mixture and form them into your desired shapes. You can make them round and flat, or oval. For an extra treat, you could also stuff them with mozzarella cheese or sweet corn kernels before shaping!

Step 6

Next, we’ll coat the shaped croquettes for frying. First, lightly dust each croquette with flour, ensuring it’s evenly coated. Then, dip them into the beaten egg wash. Finally, roll them generously in breadcrumbs, making sure they are fully covered for a crispy exterior.

Step 7

Time to fry our delicious croquettes! Heat a moderate amount of cooking oil in a pot over medium-low heat. Be careful not to overheat the oil, as this can burn the outside before the inside is cooked. Fry the croquettes in batches, ensuring not to overcrowd the pot, until they are golden brown and crispy. Enjoy your freshly fried, warm croquettes immediately!
