Homemade Plum Jam from Seasonal Plums

Ingredients- 1.5kg fresh plums
- 1kg granulated white sugar

Step 1
Begin by thoroughly washing the 1.5kg of plums. Since you’ll be using the skins, it’s crucial to clean them well. Soak the plums in a mixture of water with vinegar and baking soda, then rinse them multiple times under running water. This method effectively removes surface dirt and any pesticide residue.
Step 2
Place the washed, whole plums into a pot. Start simmering them over medium heat. Avoid using high heat initially, as this can cause the plums to lose moisture quickly and stick to the bottom of the pot. Maintain medium heat until the plums release their natural juices.
Step 3
Once the plums begin to release their liquid and the fruit starts to break down, increase the heat to high and continue to boil. Stir occasionally to prevent the jam from sticking to the bottom of the pot.
Step 4
After the plum flesh has softened and started to break apart, add the 1kg of granulated white sugar and stir well. Continue to cook as the sugar dissolves and the jam begins to thicken.
Step 5
As the jam boils, skim off any white foam that appears. This will ensure a clean and smooth jam. When the plum pieces have softened considerably and the pits become visible, carefully remove them using a spoon or tongs. Continue cooking until the desired jam consistency is reached.
