Ingredients- 5kg Ripe Pomegranates

Step 1
Start by preparing 5kg of ripe pomegranates. Wash them thoroughly under running water. Trim off the stem end and make a few shallow vertical slits on the skin to make peeling easier.
Step 2
There are two main methods for extracting the pomegranate seeds. Method 1: Use a pomegranate seed separator, cover it with a lid, and gently tap with a mallet to loosen the seeds. Method 2: Manually separate the seeds by hand. Choose the method that best suits your preference and convenience.
Step 3
Some seeds may remain attached even after using the separator. These will need to be removed by hand, which can be a bit tedious. Personally, I prefer the manual method as it minimizes seed loss. However, be sure to wear gloves (rubber or disposable) as pomegranate juice can stain your hands. (Tip: After preparing 5kg of pomegranates, the weight of the seeds alone was less than 1.5kg. Keep this in mind!)
Step 4
Now, mix half of the total sugar (500g) with the separated pomegranate seeds. For this recipe, I recommend using xylose sugar, which is less readily absorbed by the body than regular sugar. (Tip: While some suggest using honey instead of sugar, xylose sugar is more economical for large batches and doesn’t overpower the delicate pomegranate flavor.)
Step 5
Prepare your glass jars for the pomegranate syrup by sterilizing them. A safe way to sterilize is to wipe them with a damp cloth and then briefly immerse the jar openings in cool water. (Caution: Placing glass jars directly into boiling water can cause them to crack due to the sudden temperature change. Handle with care!)
Step 6
Add the prepared pomegranate seeds and the initial 500g of sugar to the sterilized glass jar. The basic ratio is 5:1 (pomegranate to sugar), but you can adjust the sugar quantity to your taste. Ensure everything is well combined for a delicious pomegranate syrup.
Step 7
Finally, to prevent air exposure and potential mold growth during fermentation, cover the top layer completely with the remaining 500g of sugar. Store the jar in a cool, dark place away from direct sunlight. Once the sugar has dissolved, your delicious pomegranate syrup will be ready to enjoy in about a week.
