Crispy Potato Chips: How to Make Them Just Like the Store-Bought Kind at Home!

Cooking Instructions
Step 1
Peel the potatoes and slice them as thinly as possible using a mandoline slicer. Thinner slices will result in crispier chips, aim for about 1mm thick if your slicer allows.
Step 2
Place the sliced potatoes in a bowl and rinse them under cold water multiple times to remove excess starch. Rinsing thoroughly will prevent them from becoming sticky and ensure maximum crispiness.
Step 3
Drain the rinsed potatoes well in a colander. Then, spread them out on kitchen towels or a clean cloth and pat them dry thoroughly. This step is crucial to prevent oil splattering and to achieve a crispier chip. Let them air dry for a bit until no moisture is visible.
Step 4
While the potatoes are drying, heat a generous amount of cooking oil in a deep pot or wok over medium-high heat. To test the oil temperature, drop a single thin slice of potato into the oil. If it sizzles immediately and floats to the surface (‘chii-iik’ sound), the oil is ready (around 170-180°C or 340-350°F).
Step 5
Once the oil is at the correct temperature, carefully add the dried potato slices in batches. Avoid overcrowding the pot, as this will lower the oil temperature and make the chips soggy. Fry the chips until they are golden brown and float to the surface. As some chips are done, gently push them aside and add more slices to continue frying. Remove the crispiest ones first.
Step 6
Transfer the fried potato chips to a wire rack or a plate lined with paper towels to drain off any excess oil. Draining them while hot is key to preventing them from becoming greasy and maintaining their crispiness.

Once drained, sprinkle the potato chips with sugar, salt, or dried parsley flakes according to your preference. Kids might enjoy a touch of sweetness, while adults may prefer a savory saltiness or herby flavor. Enjoy your delicious and healthy homemade potato chips!
