Step 1
Making red beet elixir is a very simple process. First, prepare your red beets and sugar in a 1:1 ratio. While brown sugar is preferred for its depth of flavor, you can mix white and brown sugar half-and-half if you prefer a lighter color. Approximately 60% of the sugar will be used to coat the beets initially, while the remaining 40% will be added in 2-3 installments during the fermentation process.
Step 2
In your chosen storage container (an earthenware pot or glass jar works best), sprinkle a layer of sugar (part of the initial 60%) at the bottom. Then, add the beet slices coated with sugar. Cover the beets completely with more sugar so they are not exposed. Let this mixture ferment for two weeks. After this initial period, add 20% of the remaining sugar. Wait another 1-2 weeks, then add the final 20% of the sugar. Crucially, do not stir the settled sugar at the bottom during this process.
Step 3
After a total of two months of fermentation, carefully decant the clear liquid from the top into a new container. Allow this liquid to age for an additional 3 months to up to a year before consuming. Reserve the settled sugar at the bottom; do not mix it with the liquid. This sugar can be used in cooking as a sweetener. You’ll find making red beet elixir is surprisingly straightforward.
