Strawberry Rice Waffle Ingredients

  • 2 large eggs
  • 120g milk
  • 110g cake rice flour
  • 20g glutinous rice flour
  • 10g strawberry powder
  • 10g sugar
  • 1g salt
  • Melted butter
  • Powdered sugar (for garnish)
  • Frozen blueberries (for topping)
  • Dried cranberries (for topping)
  • Maple syrup (for topping)

Rich Chocolate Ice Cream Ingredients

  • 1 pack ice cream mix
  • 200ml milk
  • 30g chocolate chips

Cooking Instructions

Step 1

To make the rich chocolate ice cream, combine the ice cream mix and 200ml of milk in a bowl. Whisk them together vigorously with a whisk until the mixture is smooth. Continue whisking until the mixture, when lifted by the whisk, leaves a clear trail and doesn’t immediately disappear back into the bowl. This step is crucial for achieving a creamy texture.

Step 1

Step 2

Pour the well-mixed ice cream batter into an airtight container and freeze for 3 to 4 hours, or until firm. Once frozen, take it out of the freezer and use a spoon or fork to scrape and break up the frozen mixture. This process helps to prevent the ice cream from becoming too hard and maintains its smooth consistency.

Step 2

Step 3

After scraping the ice cream to soften it, add 30g of chocolate chips and mix them in thoroughly. Ensure the chocolate chips are evenly distributed throughout the ice cream. Smooth the surface of the ice cream in the container, then return it to the freezer for about 1 hour. After this final freeze, your smooth and rich chocolate ice cream will be ready to enjoy.

Step 3

Step 4

Now, let’s prepare the batter for the refreshing strawberry rice waffles. In a clean bowl, crack 2 large eggs and add 120g of milk. Whisk them together until well combined and any lumps are gone. Next, sift 110g of cake rice flour, 20g of glutinous rice flour, and 10g of strawberry powder into the wet ingredients. Add 10g of sugar and 1g of salt, then mix until you have a smooth batter with no lumps.

Step 4

Step 5

Make sure to mix thoroughly to ensure the strawberry powder is evenly incorporated and doesn’t clump. Once the batter is ready, add melted butter and mix again until all ingredients are well combined. The butter will enhance the flavor and crispiness of the waffles.

Step 5

Step 6

Cover the batter with plastic wrap and let it rest at room temperature for about 1 hour. While the batter is resting, preheat your waffle maker and brush the inner plates thoroughly with oil using a pastry brush. Ladle about a portion of the batter onto the hot waffle maker, then close the lid. Cook for about 2-3 minutes on each side until golden brown and cooked through. Adjust the cooking time according to your waffle maker and personal preference. You’ll end up with delicious waffles that are crispy on the outside and slightly chewy on the inside.

Step 6

Step 7

Serve the warm, freshly baked strawberry rice waffles topped generously with the cool, rich homemade chocolate ice cream. For an extra touch of elegance, you can lightly dust with powdered sugar or garnish with frozen blueberries, dried cranberries, and a drizzle of maple syrup. Enjoy the fantastic combination of sweet ice cream and satisfying waffles!
