Making Fresh Sour Cream from Leftover Heavy Cream
If you have heavy cream nearing its expiration date and want to use it up, making sour cream at home is a worthwhile endeavor.
Ingredients- 300ml heavy cream
- Plain yogurt (unsweetened) 180ml
- Lemon juice, to taste

Step 1
Pour 300ml of fresh heavy cream into a clean, dry bowl. Using fresh, high-fat content cream is key to achieving a good sour cream.

Carefully add 180ml of plain yogurt to the bowl. It’s best to use plain yogurt without artificial sweeteners or flavors, as it contributes to the tangy flavor and texture of the sour cream.

Now, add fresh lemon juice to your preference. Lemon juice adds a refreshing zest and a touch of acidity. Using a wooden spoon or clean chopsticks, gently stir the mixture until the heavy cream, yogurt, and lemon juice are smoothly combined without any lumps. Stir slowly until all ingredients are uniformly incorporated. Once mixed, transfer the sour cream to an airtight container. Let it ferment at room temperature for about 12 to 24 hours, then refrigerate until chilled and set. The longer fermentation time will result in a richer, tangier flavor.
