For Popping Corn

  • 2/3 cup popcorn kernels
  • 2 Tbsp cooking oil
  • A little butter (optional)

For Caramel Sauce

  • 1 Tbsp cooking oil
  • 5 Tbsp corn syrup (oligosaccharide)
  • 3 Tbsp sugar

Cooking Instructions

Step 1

First, heat 2 Tbsp of cooking oil and a little butter (if you want extra flavor) in a deep pot or wok over medium heat. Once the butter is melted, add 2/3 cup of popcorn kernels. Cover with a lid and pop the corn. When the popping starts, reduce the heat to low and continue popping, being careful not to burn them. Transfer the popped popcorn to a large bowl and set aside.

Now, let’s make the caramel sauce. In a clean frying pan over low heat, combine 1 Tbsp of cooking oil, 5 Tbsp of corn syrup (oligosaccharide), and 3 Tbsp of sugar.

Once the sugar starts to dissolve, increase the heat slightly to medium-low. Stir gently until the sauce bubbles and forms a syrup. Keep stirring until it turns a clear amber color. Be careful not to overcook, as it can burn quickly. Reduce to very low heat once it starts to color.

As soon as the sauce reaches a nice amber color, add the popped popcorn to the frying pan. Turn off the heat. Quickly stir with a spatula or spoon to coat all the popcorn evenly with the hot caramel sauce. Continue stirring to ensure the caramel adheres well.

Once all the popcorn is well coated with caramel, your delicious homemade caramel popcorn is ready! It’s great to eat warm, but if you prefer extra crispiness, let it cool for a bit.
