  • 150ml milk

First, peel the steamed chestnuts and sweet potatoes thoroughly. Then, cut them into bite-sized pieces, suitable for cooking together in a pot.

Place the prepared chestnuts, sweet potatoes, and milk into a blender. Blend until smooth for a creamy spread. If you prefer a bit of texture, you can blend it less, leaving some small chunks.

Now, take a deep saucepan. Pour the blended chestnut and sweet potato mixture into the pot and add the sugar. It’s crucial to cook over low heat, stirring constantly to evaporate moisture. Adjust the amount of sugar as you taste it along the way to suit your preference. (I used brown sugar for a richer color and deeper flavor.)

If you have honey, add it at this stage. Honey will add a subtle sweetness and a beautiful sheen to the spread. If you don’t have honey, feel free to omit it. (For reference, I reduced the amount of sugar and honey slightly to achieve a thicker spread consistency.)

If you’d like to add more aromatic flavor, sprinkle in a pinch of cinnamon powder. Stir and cook over low heat for at least 15 minutes, stirring continuously. You’ll notice the spread gradually thickening as the moisture evaporates, and small bubbles will start to form. Be careful of splattering hot spread to avoid burns!

You’ll see that the volume of the spread has significantly reduced compared to when you started cooking. If the spread drips like water from a spoon, continue to simmer it a bit longer. However, when it drips thickly with a ‘plop’ sound, it’s time to turn off the heat and let it cool down for a while. (It will thicken further as it cools.)

Once the spread has cooled slightly, carefully transfer it into a clean glass jar that has been thoroughly washed and dried. Using a well-sealed container will help preserve it for longer.
