- 1/4 tsp Salt
- 2 Tbsp Heavy cream (or milk)
- 1.5 Tbsp Honey
- 1.5 Tbsp Butter
Cooking Instructions
Step 1
Let’s start with the star of the show: the sweet potato puree! Wash your sweet potato thoroughly and steam or boil it until it’s fork-tender. While it’s still hot, peel the skin and pass it through a fine-mesh sieve for a silky smooth texture. In a bowl, combine the warm sweet potato puree with heavy cream (milk is a good substitute if you don’t have cream), salt, honey, and butter. Mix everything together until it’s completely smooth and well combined. This sweet and creamy puree is the delicious base for our pizza!
Step 2
Transfer the prepared sweet potato puree into a piping bag or a sturdy zip-top bag. You can snip a corner off the bag to create a nozzle. This will make it easy to pipe decorative swirls or edges onto your pizza later.
Step 3
Time to prepare the broccoli. In a pot, bring 1 cup of water to a boil with 1/4 tsp of salt. Add your bite-sized broccoli florets and blanch them for about 30 seconds to 1 minute, just until they turn bright green and are slightly tender. Be careful not to overcook them, as they will cook further in the oven.
Step 4
Next, prepare your toppings. Slice the bacon into about 1.5cm (or 1/2 inch) pieces. Slice the mushrooms thinly. Finely chop the onion.
Step 5
For an extra layer of flavor, let’s sauté the onions. Heat 1 tsp of cooking oil in a skillet over medium heat. Add the chopped onions and cook for about 1 minute, stirring frequently, until they are fragrant and slightly softened. Don’t let them brown too much.
Step 6
Now, assemble your pizzas! Spread 2 tablespoons of tomato spaghetti sauce evenly over each tortilla, leaving a small border. Sprinkle a generous layer of shredded cheese over the sauce. Evenly distribute the sautéed onions, blanched broccoli florets, sliced mushrooms, and bacon pieces over the cheese.
Step 7
Finally, get creative with the sweet potato puree! Pipe the puree onto the pizza in your desired pattern – swirls, borders, or dollops all look great. Preheat your oven to 200°C (400°F). Bake the pizzas for about 15 minutes, or until the crust is golden brown and the cheese is bubbly and melted. Serve immediately and enjoy your delicious homemade sweet potato tortilla pizza!
