Dough Ingredients

  • All-purpose or bread flour: 80g
  • Warm water: 40g (or lukewarm water)
  • Olive oil: 10g (1 Tbsp)
  • Sugar: 1 Tbsp
  • Salt: 0.25 tsp
  • Fresh basil leaves: 6
  • Black pepper: a pinch
  • Mozzarella cheese: 1 handful (adjust to taste)
  • Instant dry yeast: 0.5 tsp

Simple Tomato Sauce Ingredients

  • Ripe tomato: 1
  • Ketchup: 3 Tbsp
  • Onion: 60g (about 1/4 of a small onion)
  • Olive oil: 1 Tbsp
  • Dried basil: 1 tsp
  • Dried oregano: 1 tsp

Step 1

First, remove the stem from the fresh tomato. Then, make a shallow cross-shaped cut on the bottom of the tomato (opposite the stem). This will help the skin peel off easily.

Boil some water in a kettle. Place the scored tomato in a bowl and pour the boiling water over it. Let it sit for 1-2 minutes until the skin starts to wrinkle and loosen. This makes peeling effortless.

Now, let’s make the dough. In your rice cooker pot, combine 20g of warm water and 20g of regular temperature water. Add 1 Tbsp sugar and 0.25 tsp salt, stirring until dissolved. Once the water is slightly cooled (lukewarm, comfortable to touch), sprinkle in 0.5 tsp of instant dry yeast and let it sit for about 5 minutes to activate.

Add 80g of flour to the pot and mix with a spoon or spatula until no dry flour remains. The mixture will be quite sticky at this stage.

Add 3 Tbsp ketchup, 1 tsp dried basil, 1 tsp dried oregano, and 1 Tbsp olive oil to the pot with the chopped tomatoes and onions. Mix everything well. Use the ‘Cook’ or ‘Reheat’ function of your rice cooker to cook for 9 minutes.

After the first cooking cycle, use a spatula to mash the tomatoes further, creating a sauce consistency. Then, select the ‘Reheat’ function again and cook for another 9 minutes to deepen the flavors.

Once the sauce is done, remove it from the rice cooker pot. Wash the pot thoroughly and dry it, as this is where the pizza will be cooked. (If your rice cooker has a ‘Steam’ or ‘Cook’ function, you might be able to make the sauce and cook the pizza in the same pot without washing.)

Gently punch down the risen dough to release the air. Lightly grease the bottom of the clean rice cooker pot with a little olive oil. Spread the dough evenly across the bottom, aiming for a thickness of about 5mm, leaving a slightly thicker edge for the crust. A thinner base will result in a crispier pizza.
