Spaghetti Ingredients

  • Mixed seafood 200g (shrimp, squid, mussels, etc.)
  • 1 medium onion
  • 1 Tbsp minced garlic
  • 1 Tbsp olive oil
  • 1 Tbsp sake (or mirin)
  • 400g prepared homemade tomato sauce

  • 800g ripe tomatoes
  • 400g store-bought spaghetti sauce (garlic & onion flavor)
  • 100g ketchup
  • 2 bay leaves
  • 3 Tbsp minced garlic
  • 2 Tbsp olive oil

Cooking Instructions

Step 1

First, thoroughly wash the 800g of ripe tomatoes, remove their cores, and blend them in a mixer until smooth. Aim for a velvety puree without any lumps for the best sauce texture.

Step 2

In a saucepan, heat 2 tablespoons of olive oil over medium-low heat. Add 3 tablespoons of minced garlic and sauté gently until fragrant, being careful not to burn it. This step builds a crucial flavor base.

Step 3

Pour the blended tomato puree into the sautéed garlic. Simmer over medium-low heat, stirring occasionally, until the volume reduces by about one-third, concentrating the flavors. Reducing the liquid like this enhances the tomato’s natural sweetness and depth.

Step 4

Once the tomato puree has reduced to about two-thirds of its original volume and thickened, stir in 400g of store-bought spaghetti sauce (garlic & onion flavor). Mix well to combine.

Next, add 100g of ketchup to the sauce and stir until the color and flavors meld into a harmonious blend.

Finally, add 2 bay leaves for aromatic depth. Continue to simmer until the sauce reaches a slightly thickened consistency. Remember, it will thicken further when combined with the pasta, so avoid making it overly thick at this stage. A good consistency will coat the pasta nicely.

Transfer the finished homemade tomato sauce into sterilized glass jars. Seal the jars and invert them immediately while still hot. This vacuum-sealing method helps preserve the sauce’s freshness for longer. Once cooled, store in the refrigerator; it should keep well for about 10 days.

Now, prepare the seafood for your spaghetti. Thaw the frozen mixed seafood under cold running water, then drain thoroughly. To eliminate any potential fishy odors, sprinkle 1 tablespoon of sake (or mirin) over the seafood after thawing.

Bring a large pot of salted water to a rolling boil. Add 2 servings of spaghetti pasta and cook according to package directions, but aim for about 1 minute less than al dente (typically 7-9 minutes total cooking time). Simultaneously, start preparing the vegetables and seafood in a separate pan. By timing this so the pasta finishes cooking around the same time as the sauce and seafood are ready, you can assemble the spaghetti efficiently for a quick and delicious meal!

While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add 1 tablespoon of minced garlic and sauté until fragrant.

Add the chopped onion to the skillet and sauté until it becomes translucent. Once the onion is softened, add the prepared seafood. Pour in 1 tablespoon of sake (or mirin) to further eliminate any seafood odors. Stir-fry briefly after adding the sake.

After quickly stir-frying the seafood, cover the skillet with a lid and let it cook for another 1-2 minutes, allowing the seafood to steam and become tender. Be careful not to overcook the seafood, as it can become tough.

By now, your pasta should be perfectly cooked. Drain the pasta using a colander and immediately transfer it to the skillet with the seafood. Add a generous amount of your prepared homemade tomato sauce to the pan. Gently toss everything together to coat the seafood and pasta.
