Homemade Vegan Tomato Sauce

Main Ingredients- 500g Ripe, fully-matured tomatoes
- 100g Red onion
- 15g Garlic (approx. 3-4 cloves)
- 2 Tbsp Extra virgin olive oil
- 0.5 tsp Pink salt (or sea salt)
- 1 tsp Dried basil
Cooking Instructions
Step 1
First, peel the garlic cloves and slice them thinly or mince them finely if you prefer a deeper flavor. Peel and finely chop the red onion as well. Finely chopping the vegetables ensures a smooth sauce.
Step 2
Wash the tomatoes thoroughly, remove the cores, and cut them into bite-sized pieces of about 2-3 cm. Well-ripened tomatoes will yield a richer sauce.
Step 3
Place a pot over medium-low heat and add 2 tablespoons of extra virgin olive oil. Add the prepared minced garlic and sauté gently for about 1 minute until fragrant, being careful not to burn it. It’s important to let the garlic flavor infuse into the oil.

Once the garlic is fragrant, add the chopped red onion and sauté until it becomes translucent. Sautéing the onion until it’s sweet will enhance the sauce’s flavor.

Add the prepared tomatoes to the pot and stir-fry them together. Cook for about 5-7 minutes until the tomatoes release their juices and the mixture becomes slightly watery. This process concentrates the fresh tomato flavor.

Now, add 1/2 teaspoon of pink salt and season evenly. Pink salt is rich in minerals compared to regular salt, adding a subtle sweetness and umami.

Add 1 teaspoon of dried basil and mix well. Cover the pot and simmer over low heat until the tomatoes break down and become saucy, about 15-20 minutes. The tomato pulp will naturally disintegrate into a sauce.

Strain the cooked tomatoes through a sieve. Using a spatula or spoon, press the tomatoes to separate the skins and seeds. Removing the skins results in a smoother sauce texture. Return the mashed tomato pulp to the pot.
Step 9
Pour the finished tomato sauce into a sterilized and dried glass jar. Once completely cooled, seal the lid and store in the refrigerator. It will keep fresh for about 1-2 weeks. Enjoy your delicious homemade tomato sauce in various dishes!
