Making the Roux- 4 Tbsp Butter
- 4 Tbsp All-Purpose Flour
Sauce Ingredients- 1/2 cup Worcestershire sauce
- 1/2 cup Ketchup
- 1/3 to 1/2 cup Sugar (adjust to taste)
- 1.5 cups Water (for consistency adjustment)
- 1/2 cup Milk

Cooking Instructions
Step 1
To start making our delicious tonkatsu sauce, we first need to prepare the ‘roux’. A roux is typically made with equal parts butter and flour, and it serves to thicken the sauce and add depth of flavor. For this recipe, I’ve prepared 4 tablespoons of butter and 4 tablespoons of flour.
Step 2
Melt the butter in a pan over low heat. Once melted, add the flour and stir continuously to combine, ensuring there are no lumps. It’s important to cook this over low heat to prevent the flour from burning. Sauté for about 2-3 minutes until it develops a fragrant, nutty aroma.
Step 3
Now, add the sauce ingredients: Worcestershire sauce, ketchup, and sugar, to the sautéed roux. Whisk vigorously to break down any lumps and ensure everything is smoothly incorporated. Cook, stirring, until all ingredients are well combined.

Once the sauce ingredients are well blended, slowly pour in the 1/2 cup of milk while stirring. Continue to stir and cook over medium-low heat until the sauce begins to gently bubble and thicken. Let it simmer for about 3-5 more minutes to reach the desired consistency.

Now it’s time for tasting! Adjust the sweetness by adding more sugar if needed, and modify the consistency by adding a bit more water if it’s too thick. I found it a little too thick for my liking, so I added a splash more water and simmered it briefly. Continue cooking until you achieve your preferred taste and thickness.

Once your sauce is perfectly prepared, generously ladle it over freshly fried tonkatsu for a restaurant-quality meal right in your own home.
