  • 1/2 large ripe tomato
  • 5 cloves garlic
  • 4 Tbsp olive oil
  • Pinch of dried oregano flakes
  • Pinch of salt
  • Pinch of freshly ground black pepper

First, prepare a large, deep pot and fill it with plenty of water for cooking the spaghetti. Bring the water to a rolling boil over high heat. While the water heats up, you can start preparing the sauce to save time.

Take half of a fresh, ripe tomato that you’ve washed thoroughly. Remove the stem and cut it into large, bite-sized pieces. Cutting the tomato into larger chunks will help maintain a pleasant texture when sautéed, making it more delicious.

Peel the 5 cloves of garlic, then thinly slice them. Slicing the garlic thinly allows its flavor to infuse beautifully into the olive oil, deepening the sauce’s taste.

Once the water is at a rolling boil, add about 1 teaspoon of olive oil and a pinch of salt to prevent the spaghetti from sticking together. Add the spaghetti and cook it according to the package directions, but remove it about 1 minute earlier to achieve an al dente texture. Reserve about 1 cup of the pasta water before draining.

In a skillet that has not yet been heated, add 4 tablespoons of high-quality olive oil. Add the thinly sliced garlic. Turn on the heat to medium-low only after adding the garlic to prevent it from burning and to allow its aroma to gently release. Sauté the garlic slowly until it turns a light golden brown and becomes fragrant.
