This is a truly delicious toast featuring a fantastic harmony of sweet and savory flavors, thanks to a generous amount of crunchy cabbage. It’s thick, satisfying, and has a wonderful sweet-and-salty balance. Packed with vegetables and eggs, it’s not only tasty but also nutritious, making it a perfect, hearty meal or brunch option.
Toast Ingredients- 2 slices of bread
- 1 slice of cheese (or processed cheese slice)
- 2 eggs
- 1/4 carrot
- 1/4 head of cabbage (approx. 200g)
- 1/2 stalk of green onion (white part)
- 3 strips of bacon
Seasoning and Condiments- 1 knob of butter (for toasting bread)
- 1 Tbsp honey (for spreading on bread)
- 2 Tbsp ketchup (for finishing)
- Pinch of salt (for egg mixture seasoning)

Cooking Instructions
Step 1
Wash the cabbage thoroughly, remove the core, and thinly slice it into approximately 0.5cm thick strips. Slicing them a bit thicker than shredded will help retain their crunch after cooking.
Step 2
Wash and peel the carrot, then julienne it into thin strips about 0.3cm thick, similar to the cabbage.

Finely chop the white part of the green onion. You can also add chopped onion for extra flavor.

In a large bowl, combine the prepared cabbage, carrot, and green onion. Crack the 2 fresh eggs into the bowl.

Mix everything well with a fork or spatula until the eggs are evenly combined with the vegetables. Season the egg mixture with a pinch of salt for better flavor. Ensure the ingredients are well-mixed and not clumpy.

Melt a knob of butter in a heated pan over medium heat. Place the 2 slices of bread in the pan and toast them until golden brown on both sides. The butter will add a wonderful aroma and flavor.
