Easy Cereal Bars Made with Store-Bought Honey Rice Cake

Main Ingredients- 1 pre-made ‘Sotban’ Honey Rice Cake (or similar)

Step 1
First, microwave the pre-made honey rice cake for about 2 minutes until it’s warm and pliable. While the honey rice cake is heating, coarsely chop the walnuts and pistachios. You want a chunky texture, not finely ground. The sliced almonds can be used as they are.

Transfer the warmed honey rice cake to a bowl. Add the 2 tablespoons of water. Using a spoon, mash and mix the honey rice cake and water together until well combined. It’s important to mix it thoroughly so the stickiness of the rice cake helps bind everything.

Add the chopped walnuts, sliced almonds, dried cranberries, roasted soybean flour, and fig jam to the honey rice cake mixture. Mix everything together evenly. The mixture will be sticky, so to prevent it from sticking to your spoon, lightly coat the back of the spoon with sunflower seed oil or dip it in water before mixing. Ensure all the ingredients are well incorporated.

Line a small baking pan or container with parchment paper. Place the mixture onto the parchment paper. Use the back of an oiled or wet spoon to spread the mixture evenly, then press down firmly with your hands. Aim for a consistent thickness and a flat surface for the best results. Pressing down firmly is key to making sure the bars hold together.

Flip the mixture over (still on the parchment paper) and press down firmly on the other side using the spoon or your hands, just as you did before. Ensure both sides are well-compacted. This step helps create dense bars that won’t crumble when cut.

Keep the mixture in the parchment paper and refrigerate for at least 1 hour, or until firm. Chilling is essential for clean cuts.
