First, it’s important to thoroughly clean any mud or debris from the shell of the live abalone. Use a soft toothbrush or brush to scrub the surface of the abalone shell, front and back, carefully. Just like washing clams, diligent cleaning will preserve the abalone’s freshness.
Step 2
Now it’s time to separate the abalone meat from the shell. Prepare the back of a spoon or a thin, sturdy knife (like a paring knife). Carefully insert the spoon or knife into the gap along the edge of the abalone shell, and use it to scrape and pry off the adductor muscle that connects the meat to the shell.
Step 3
Using the area you scraped with the spoon or knife, gently lift the abalone meat to completely separate it from the shell. The goal is to get a smoothly detached piece of abalone meat.
Step 4
With the abalone meat separated, carefully use scissors to cut off the innards attached to the side and place them in a separate container. Usually, you can trim the hard part between the abalone’s head and foot with scissors to neatly separate the innards. Be careful not to burst the abalone’s ink sac when separating. Set the separated innards aside.
