Chef Sumi’s Recommended Recipe! Simple and Deep Flavored Jeonju-Style Bean Sprout Soup
Introducing an extremely simple Jeonju-style bean sprout soup from the TV show ‘Chef Sumi’s Side Dishes’. This recipe is perfect for a quick and delicious meal or hangover cure.
Bean Sprout Soup Ingredients- 1-2 handfuls of fresh bean sprouts (approx. 150-200g)
- About 500ml of water (approx. 2.5 cups)
- 1 tsp minced garlic
- 0.5-1 tsp salted shrimp (for seasoning)
- 1 Cheongyang chili pepper (adjust to taste)
- 1 tsp toasted sesame seeds
- 0.5-1 tsp red chili flakes (for spice level)
- 1 egg
Basic Broth Ingredients- 1 piece of dried kelp (dashima), 5cm x 5cm
- 8 dried anchovies (for broth)
- 2 dried striped poaches (di-po-ri)
- 4-5 dried radish roots (taeng-i-pul) (washed clean)

Cooking Instructions
Step 1
In a pot or earthenware pot, arrange the dried kelp, dried anchovies (gutted), dried striped poaches, and washed radish roots at the bottom. These ingredients will create a clear and refreshing broth base.
Step 2
On top of the broth ingredients, spread the washed bean sprouts evenly without overlapping. It’s important to maintain the crispiness of the bean sprouts, so avoid overfilling the pot.
Step 3
Add about 500ml of water, just enough to cover the bean sprouts. Then, turn the heat to high, cover the pot tightly, and let it boil for about 6 minutes to cook the bean sprouts without letting them become mushy or develop a strong smell. Keeping the lid on is key to preventing any unpleasant bean sprout odor.
Step 4
After 6 minutes, when the bean sprouts are cooked to your liking, remove the lid and add 1 tsp of minced garlic and 0.5-1 tsp of salted shrimp to season the soup. Salted shrimp adds a savory depth, so taste and adjust the amount as needed.
Step 5
Next, add 1 finely chopped Cheongyang chili pepper for a bit of heat and 1 tsp of toasted sesame seeds for nutty flavor. If you enjoy spicier food, feel free to increase the amount of chili pepper or red chili flakes.
Step 6
Finally, gently pour 1 beaten egg in a circular motion around the edges of the pot. Let the egg cook for a moment, then sprinkle 0.5-1 tsp of red chili flakes on top according to your preference. Your delicious Jeonju-style bean sprout soup is now ready to be enjoyed with a bowl of rice!
